Orange Soup

My favourite thing to cook up on these cold wintery days is a big batch of "orange soup"! Full of Vitamin C to ward off colds and flus. Add some Greek yoghurt to your soup to thicken it.. trust me!

Ingredients:

1/2 kent pumpkin

1/2 medium sweet potato

1 carrot

500ml vegetable stock

2 spring onion stalks

1 tbsp chobani

Method:

1. Chop pumpkin, sweet potato and carrot in to cubes and place in stove-top dish

2. Add 500ml vegetable stock and let simmer

3. Chop spring onion and add to soup

4. Allow vegetables to cook until soft then use hand held mixer to blend until smooth

5. Add 1 tbsp plain chobani Greek yoghurt and mix in
