Vegetable Bake

INGREDIENTS (SERVES 4):

– 1/2 eggplant

– 1 zucchini

– 5 cherry tomatoes

– 1 cup quinoa

– 3 eggs

– 2 spring onion sprigs

– olive oil

METHOD:

1. Slice vegetables, drizzle in olive oil and bake in oven for 20 minutes

2. Whilst vegetables are roasting, cook 1 cup quinoa in 2 cups water

3. Mix vegetables into cooked quinoa

4. Whisk 3 eggs and add to mixture

5. Chop spring onion and mix through

6. Place in baking dish in oven for 30 minutes
